Right now, the only way to change these ratios is to create a Weight Goal. During one of the steps, you will be asked to adjust these ratios to whatever you like. I'm in the process of creating a calorie intake page, which will be a page that shows your daily calorie intake from foods and your expenditures from basic body functions ...

Where do you see that you have reached your daily limits for fat, carbs, protein, etc.? Are you talking about the Nutrition Scorecard page? I think you are talking about the percentages that are shown in the right hand column of the Daily Calories Eaten section?
If so, then that may be where the misunderstanding ...

hey so I always reach my daily fat, carbs, and proteins for the day before I've reached my daily calorie intake, is there something I'm missing here? If I eat more calories wont I exceed the fat , carbs, or proteins? Also is this a minimum, a maximum, or a medial requirement(like is it my goal to reach those % , be below them, or reach above ...
